Salt, a must-have pantry staple, is repurposed to illustrate Chef Sean Sherman’s food, philosophy and community. In this design, I use Sherman’s Bison Pot Roast with Hominy recipe as a source of inspiration - the dish is illustrated on the front with its ingredients. The side showcases a brief history of Bison in North America, including its cultural significance, depopulation and eventual conservation of the species. Sherman is an Oglala Lakota Oyate from Pine Ridge Reservation in South Dakota and has been cooking for the last 30 years. His culinary philosophy is to revitalize and bring awareness to indigenous food systems in a modern culinary context. He has abandoned the use of ingredients not endemic to North America, bringing traditional Oglala foods to the light.
